Sarde a beccafico
Sardines a beccafico, a typical Sicilian dish, are here offered in the Palermo version: rolls stuffed with pine nuts, raisins and breadcrumbs. An easy recipe, ideal for dinners with friends or family lunches.

Ingredients
- 800 g of sardines
- 150 g of breadcrumbs
- 1 teaspoon of sugar
- 60 g of passolina (or raisins)
- 60 g pine nuts
- 1 bunch of parsley
- juice of an orange
- halls
- pepper
- extra virgin olive oil
- bay leaves
Preparation
Clean the sardines, opening them by the book, rinsing and blotting them with kitchen paper. Place the sardines neatly on a cutting board, and in a frying pan toast the breadcrumbs with oil and salt, stirring often.
Mix breadcrumbs, sugar, raisins previously left in water for about 30 minutes, pine nuts, parsley and pepper. Add water if necessary and stuff the sardines by rolling them up like rolls and arrange in an oven dish.
Alternate rolls with bay leaves, add orange juice and a drizzle of oil.
Bake at 180 degrees for 15 to 20 minutes.
